Pork Chili Verde Soup – Instant Pot Ingredients: 2 ½ pounds pork shoulder/butt (or pork loin), fat trimmed and cut into 1” cubes 2 Tbsp. salt 1 yellow onion, chopped 2 cartons (32 fl. oz each) chicken stock, low sodium 2 cups Los Betos Green Salsa (can use any brand of green salsa) 2 jars (16 oz. each) Herdez Salsa Verde  ½ cup cilantro 6 medium russet potatoes, skin on, cleaned, and cut into 1” cubes 2 Tbsp. garlic powder 1 tsp. cumin 2 tsp. onion powder 1 tsp. coriander 1 Tbsp. McCormick Season All Instructions: Trim fat from pork shoulder the best you can. Cut into 1” cubes and season meat with the salt and mix to combine. Brown pork on all sides in batches on the “Saute” mode in your Instant Pot or in a cast iron skillet. Only partially cook the pork, you just want the brown crust on each piece of pork. Set aside. On August 29th, 2012. I welcomed my second niece into this world. On that day, I was working in Cedar City and was coming past Duck Creek when I got a call from a number I did not recognize. I didn't answer, not only because I did not have hardly any service, but because I was not sure who it was. I got about half way between Tod's Junction and Duck Creek and I got the voicemail. It was from my mom, she said. Tessla is at the hospital. Her water broke and we are waiting to see the doctor. I panicked!!! I was over 4 hours away at that exact moment and was afraid I wouldn't make it there in time. I stopped at Tod's Junction and tried to call the number back. I got my mom on the phone and she said that Tessla had just seen the doctor and that she was at a 6 and fully effaced. I knew at that exact moment I was not going to make it in time. Trace's 1st Day of Preschool

Trace's First Day of School - Preschool It was so much harder to drop Trace off at school. My little boy has been so excited to start school. He needs some friends, some socialization, and a good place to learn. I took Trace to school and had to stay an hour to make sure he was ok. He played with puzzles the first couple minutes. Sat on the rug after cleanup. Everytime some other child would touch him, he would move away. It was breakfast time, and I help his table pass around the food, and open their milks. After that I just sat back and watched to see how Trace would handle all the kids. He seemed to do just fine, just unsure about what they wanted him to do. After we cleaned up  breakfast, I stood back and he played with puzzles again. I told him I loved him and he said bye to me and I left. I was really worried about how he would do. Would he nap? Cason's First Week of School - Kindergarten So many mixed emotions for me. I took Cason to his first day of school and I  felt so sad to leave him there. He did great and is already learning so much. His teacher is Mrs. Christensen (Shelley is how I know her, she used to be my young women's teacher). I hope she is able to keep Cason in line. He has to have his mind constantly doing something challenging or he gets bored and gets into trouble. So far, so good. Lets hope he doesn't cause her too much grief this year! Pickle Time

Well I have had a bad day today. Between mean customers and only being able to see my Grandma and Grandpa Heintz for 45 minutes, I've got a headache and I'm irritated. I decided to can some pickles to ease my frustration. It always helps me feel better when I cook, bake, or can something.  I got my first crop of cucumbers today and was pretty proud of myself for canning 3 jars of pickles. (While cutting my finger on the slicer in the process). I hope these pickles turn out ok. I made a ton of pickles last year and I only got like 2 slices. People wanted to buy them by the jar full last year.  Grandma and Granda Heintz was driving from Idaho (they went to pick up Lilah to take her to Phoenix for school) and they wanted to stop by and see us. The original plan was that they were going to spend the weekend. Grandpa hurt his back and they are going to go home earlier then expected. Tessla's Baby Shower

It will be a week tomorrow that I went and seen my sister Tessla at her baby shower in Flagstaff. I've been so busy that its taken me this long to post this. I had been trying to call Tessla for days, messaged her on Facebook, and never got a response. I wanted to let her know that Dana and I would be coming to her baby shower. Luckily Tessla put the address to her baby shower on the invite, so I was able to find out where it was. Dana and I had a great drive there. Talking, laughing, and listening to some tunes. :) I love Dana. I had such a good time with her and was glad it was just her and I on the trip. It was a lot of fun. I could hear Tessla's voice as soon as I got out of the car, and was excited to surprise her. Because she didn't know for sure that I was coming. Baby Blankets for The Big Day

Today has been a pretty good day. Got up early because the kids wouldn't sleep past 6.am. Started working on 2 receiving blankets for Tessla. Got those two done and decided to find some way to make some burp rags too. The blankets turned out really good. And I was pretty proud of myself for making the burp rags. I have never done those before. I got to take a nap and got dinner made for me. Devlin is such a good man and I could not ask for a better husband! I love him so much! I have been watching the olympics all day, I really only like the swimming and gymnastics. But it's been a very relaxing and wonderful day. I am waiting for Kristina to come over and see me. She told me she would come over. I hope she does. I haven't seen Brylee in weeks and I miss both of them. I hope she follows through on her word and will come over, I wanna show her the blankets I made for Tessla. We are leaving around 8:30a.m. to drive to Flagstaff to see Tessla. FRIDAY!!!!!!

ITS FINALLY FRIDAY!!! Wahoo, so ready for the weekend. Gonna spend a few hours tonight and most of tomorrow making baby receiving blankets for my sister, Tessla's baby shower on Sunday. The count down begins till baby girl gets here. Im excited to have another niece, but bittersweet about the thought that I will only be able to see her two or three times a year. I can't remember what Tessla said her name was gonna be, so I am already trying to think of nicknames for her. Cason is Bug, Trace is Moo or Shmoo, Brylee is Monkey..... Any ideas? Baby Girl will be........ummm........guess I better meet her first before I think of nicknames. Well I had a little mixed drink and am feeling pretty good. Mostly just excited to see Tessla this weekend. (I wonder if my grammar and spelling irritates some people when they read this? Sorry people, I have never been good at spelling or grammar.)
